FRUIT AND NUT BROWNIE BATTER COOKIES 🍪 🍫 (DAIRY AND EGG FREE).
BANK HOLIDAY BAKING 👸🏽. MY FAV COOKIE RECIPE IN THE WORLD 🌍💕.
🔺2 flax eggs (2 tablespoons flaxseed + 6 tablespoons water. You could also use another egg substitute, e.g. chia seeds or UM EGGS lol 🍳🙃)
🔺1/3 cup of agave nectar/honey/maple syrup.
🔺1/4 cup nut butter, i used BulkPowders triple nut butter.
🔺3 tablespoons of milk - i used almond
🔺 A few drops of liquid vanilla sweetener or 1 tsp of vanilla essence
🔺1 cup of spelt flour or plain flour
🔺 1/2 cup of BulkPowders coconut sugar.
🔺1/3 cup of BulkPowders dried cranberries 🔺1/3 cup of BulkPowders chopped walnuts
🔺 1/3 cup cocoa powder
🔺 1/2 teaspoon baking powder
🔺2 pinches of salt
( A few extra chopped nuts for the topping, i used walnuts again )
☝🏽Firstly make your flax egg and let it set in the fridge for 15 mins.
MIX ALL THE INGREDIENTS TOGETHER 🥄. Then add the flax egg and mix some more!
Place the batter in the fridge for 5-10 mins to set.... if you are impatient DONT WORRY TOO MUCH ABOUT THIS STEP 🤷🏽♀️🤷🏽♀️.
Scoop the batter onto a lined baking tray into balls. DONT FLATTEN THE BALLS! They will spread when they cook. Sprinkle on your chopped nuts of choice🥳.
Place in a preheated oven at 180*C for 15 mins 🔥 .
